Ingredients:
3 Eggs
Olive Oil
1/3 Cup Milk
1/4 Cup White Vinegar
40 Grams Butter (Chopped)
3/4 Cup Self-rising Flour
1/2 Cup Corn Kernels
Ducktrap Smoked Salmon
Fresh Chives
Cracked Pepper
Water
Time to start cooking!
Have your Ducktrap smoked salmon ready.
In a medium bowl, whisk 1 egg, milk and flour until smooth. Stir in corn kernels.
Heat butter and olive oil in skillet over medium-high heat. Add 2 TBSP of batter per fritter to skillet. Lightly fry on both sides until golden. (About 2 minutes per side)
Set corn fritters aside for later.
Set water and vinegar to a boil. Meanwhile, crack 1 egg into a custard cup or small ramekin. Use the handle of a spatula or spoon to quickly stir the water in one direction until it's all smoothly spinning around.
Carefully drop the egg into the center of the whirlpool. Let is poach for 3 minutes then carefully remove the poached egg. Repeat this step for the second egg.
It’s time to build! Place corn fritters on a plate.
Layer on Ducktrap smoked salmon then add your poached eggs.
Top it off with olive oil, cracked pepper and fresh chives.
