SMOKED SALMON STUFFED AVOCADO

Ingredients:

1 package Ducktrap Smoke Roasted Salmon, separated into small pieces
1 Red Onion
1 Red Bell Pepper
2 tbsp Fresh Parsley
2 tbsp olive oil
2 Hass Avocados
Salt and pepper, to taste

Instructions

  1. Finely chop the red onion, red bell pepper and fresh parsley. Set aside.
  2. Cut the Smoke Roasted Salmon into small chunks and place in a large bowl.
  3. Add in your chopped onion, red bell pepper and fresh parsley into large bowl with salmon. Pour olive oil into large bowl, then mix together with ingredients until evenly coated.
  4. Cut the avocados in half and remove the seed. Place the avocados in the oven for 5 minutes at 400F degrees. Once done baking, remove avocados and set aside to cool.
  5. Finally, add mixed ingredients into each avocado half and finish with salt and pepper.
