Smoked Salmon Tacos with Dill Slaw

Ingredients:

– 16oz lightly smoked salmon
– 8 Small tortillas

For the Dill Slaw:
– 2 Cups shredded cabbage
– 1 Tbsp white vinegar
– 1 Tbsp fresh dill, chopped
– Salt and pepper, to taste

For the Avocado Mash:
– 2 Ripe avocados
– 1 Tbsp lime juice
– Hot sauce, to taste
– Salt and pepper, to taste

Instructions

  1. Make the Slaw: An hour before serving, combine cabbage, vinegar, dill, salt, and pepper in a bowl. Refrigerate to let the flavors meld.
  2. Prepare the Salmon: Preheat the oven to 425°F. Place the salmon on a baking sheet brushed with olive oil and bake for 12-15 minutes or until just cooked through.
  3. Warm the Tortillas: Wrap the tortillas in foil and place them in the oven for the last few minutes of baking to warm.
  4. Make the Avocado Mash: Mash avocados with lime juice, hot sauce, salt, and pepper.
  5. Assemble the Tacos: Serve warm tortillas topped with avocado mash, chunks of salmon, and slaw. Fold and enjoy!
