Lightly Smoked Salmon with Zucchini Noodles

Ingredients:

2 Lightly smoked salmon portions, halved
Salt and pepper, to taste
3 tbsp butter (divided)
1 tsp hot sauce (optional)
2 cloves garlic, minced
1 tbsp fresh lemon juice
1 tbsp fresh parsley, chopped (plus extra for garnish)
½ tsp red pepper flakes (optional)
2 medium zucchinis, spiraled
basil for garnish

Instructions

  1. Heat 1 tablespoon of butter in a pan or skillet over medium heat. Place the salmon, skin side down, into the pan. Cook for 2–4 minutes on each side, depending on the thickness. Once cooked, remove the salmon and set aside.
  2. In the same hot pan, melt the remaining 2 tablespoons of butter. Stir in the hot sauce (if using), minced garlic, lemon juice, parsley, and red pepper flakes (optional).
  3. Add the zucchini noodles to the pan. Stir well to coat them in the butter sauce. Cook for 3–4 minutes, stirring occasionally, until the noodles are tender and their juices have reduced.
  4. Season the zucchini noodles with additional salt and pepper to taste. Plate the noodles and salmon, then garnish with extra parsley.
  5. Serve immediately for a fresh and flavorful meal. Enjoy!
