Cold Smoked Salmon Salad

Ingredients:

– 4 oz Spruce Point Traditional Cold Smoked Atlantic Salmon
– 5 oz Baby Spring Mix
– 4.5 oz Cherry Tomatoes, halved
– 4 oz Feta cheese
– 1⁄2 Cup Chopped Walnuts

Vinaigrette
– 2 Tbsp honey
– 1 Tbsp Dijon mustard
– 1/2 Tbsp fine sea salt
– 1/2 Tbsp freshly crushed black pepper
– 1 Large garlic clove minced
– 1/4 Cup balsamic vinegar
– 3/4 Cup extra virgin olive oil

Instructions

  1. For the vinaigrette, in a small mixing bowl whisk together the honey, balsamic, mustard, salt, pepper and garlic. Add oil and whisk thoroughly to combine. Continue whisking until the dressing is fully emulsified.
  2. In a large bowl mix all the salad ingredients: spring mix, cherry tomatoes, feta cheese, and walnuts.
  3. Top it with cold smoked salmon
  4. And drizzle balsamic vinaigrette.
