Hot Honey Salmon Sweet Potato Skillet Hash

Ingredients:

  • 6 oz Hot Honey smoke roasted salmon, flaked
  • 1 large sweet potato, diced
  • ¼ red onion, thinly sliced
  • 1 tbsp olive oil
  • 1 handful baby spinach
  • 1 egg (fried or poached), optional

Instructions

  1. Heat oil in skillet and cook sweet potato until tender and golden (about 10–12 min).
  2. Add red onion and cook 2–3 min more until softened.
  3. Toss in spinach and stir until wilted.
  4. Add flaked salmon just to warm through.
  5. Top with a fried egg if desired and serve straight from the pan.
