– 6oz Ducktrap Hot Smoked Trout Fillet, portioned
– 1 Ciabatta bread (or bread of preference), sliced
– 2 Hass Avocados
– 1 Tbsp Lemon juice
– 2 Tbsp Coriander finely chopped
– Red Onions, sliced
– Olive oil
– Salt & Pepper to taste
Instructions
On a baking sheet, place the slices of bread, rub them with olive oil and bake at 350°f until lightly browned.
In a bowl, mix and mash the avocados, add the lemon juice, cilantro, salt and pepper.
Now assemble, on a long plate place the slices of bread, spread the avocado mixture and add the smoked trout pieces.
Top with a few strips of red onion.
Garnish with fresh coriander leaves and enjoy.
