Smoked Salmon Spinach and Broccoli Quiche

Ingredients:

– 4oz Smoke Roasted Atlantic salmon, flaked
– 1 store-bought pie crust (optional) or use without for a crustless quiche
– 4 large eggs
– 1 cup milk (or half-and-half for creamier texture)
– 1 cup cooked broccoli florets, chopped
– 1 cup fresh spinach, roughly chopped
– 1/2 cup shredded cheese (like Gruyère or cheddar)
– Salt and pepper, to taste
– A pinch of fresh herbs, like chives or dill, (optional)

Instructions

  1. Preheat Oven: Set to 375°F (190°C).
  2. Prep Crust: If using a crust, press it into a pie dish and pre-bake for 8-10 minutes until lightly golden.
  3. Mix Filling: In a bowl, whisk together eggs, milk, salt, and pepper. Stir in broccoli, spinach, smoked salmon, and cheese.
  4. Assemble: Pour mixture into the pre-baked crust or greased pie dish for the crustless version.
  5. Bake: Place in the oven and bake for 30-35 minutes, or until the center is set and a knife comes out clean.
  6. Cool & Serve: Allow to cool for 5-10 minutes, then slice and enjoy!
