Lightly Smoked Salmon with Creamy Spinach

Ingredients:

– Lightly smoked Atlantic salmon
– Chopped parsley
– Lemon slices
– Salt (to your liking)
– Cracked black pepper
– 2tbsp of grated parmesan cheese
– 2oz cream cheese
– 1/4 cup of whip cream
– 1tbsp of olive oil
– 1tbsp of unsalted butter
– 1/2 cup chopped red bell pepper
– 2 gloves garlic, minced
– 8oz fresh baby spinach

Instructions

  1. Heat a large skillet over medium heat. Add olive oil, butter, and red pepper flakes (if using). Add garlic and sauté briefly until fragrant.
  2. Remove the portions from packaging and place the salmon in the skillet and cook for 2–4 minutes per side, depending on the thickness of the portions. Once cooked, set aside.
  3. In the same skillet, add the baby spinach and chopped red bell pepper. Stir until the spinach wilts down.
  4. Add Parmesan cheese, heavy cream, and cream cheese to the skillet. Mix well until the cream cheese melts and the mixture reaches a creamy, sauce-like consistency.
  5. Plate the salmon and top with the creamy spinach mixture. Finish with a drizzle of lemon juice and garnish with chopped parsley.
