Lightly Smoked Salmon with Citrus Salad and Crème

Ingredients:

  • 1 portion lightly smoked Atlantic salmon
  • Salt and pepper, to taste
  • 1 tbsp lime juice
  • 1 tbsp blood orange juice
  • Fresh dill leaves, to taste
  • 1 small blood orange, sliced
  • 1 lime, sliced
  • 2 cups arugula
  • ¼ cup pistachios, chopped
  • 1 celery stalk, thinly sliced
  • 1 blood orange, segmented (supreme)
  • For the Citrus Crème Dressing:
  • ¼ cup sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1 tbsp blood orange juice
  • 1 tbsp water (if needed, to adjust consistency)

Instructions

  1. Preheat the oven to 375°F (190°C). Bake in the oven for 10-12 minutes, or until the salmon is fully cooked. Remove from the oven and set aside.
  2. In a bowl, mix arugula, chopped pistachios, sliced celery, and blood orange segments. Set aside.
  3. In a small bowl, mix together sour cream, mayonnaise, lime juice, and blood orange juice. Season with salt and pepper to taste, and add a tablespoon of water if necessary to achieve a dressing-like consistency.
  4. On a plate, arrange the salad mixture. Top with the baked salmon, and drizzle the citrus crème dressing over the salad.
  5. Serve immediately and enjoy the fresh, vibrant flavors!
